When an egg of poor quality reaches the table of the consumer It naturally creates a feeling of extreme disgust. Nothing is more appetizing than a well prepared egg of the best quality. Nothing is more exasperating than a poor egg. It spoils the whole meal. Now, toward whom Is disgust and exasperation aimed? If it is in a hotel, the management is more or less silently cussed. If it is at home the cook comes in for her share, and possibly there are few mutterings about cold storage. But that is not ail The person who gets a taste of a poor egg does not care to have eggs for breakfast again until he has had time to forget his disappointment. In the meantime the egg trade suffers.
