People of wealth, east and west, are In the habit of buying whatever suits their fancy regardless of cost. In the east premiums above the highest market price are paid for eggs that besides being of the best quality are large, uniform in size, even in color and perfectly clean, In New York a premium is paid for white eggs. One of the reasons given is that the shells are not so tough and the eggs are more conveniently handled. In Boston the brown egg is preferred and paid for. They say that a brown egg has a richer flavor. San Francisco also prefers a brown egg. The wellto-do people of Iowa take any kind of an egg that Is shoved at them if it tastes all right. This is not because they have never been shown. Their good
taste is as keen as any New Yorkers.
