SUMMER VEGETABLES 2 lb. zucchini 1/4 c. butter 1/2 c. sliced onion 1 3/4 tsp. salt Dash pepper
1/2 tsp. oregano
3 tomatoes, peeled and cut
3/4 c. fresh corn
1/2 c. grated Cheddar cheese
Cut zucchini in 1/2” slices. Saute onion in butter, add zucchini, salt, pepper, and oregano. Bring to a boil, reduce heat and cover. Simmer for about 10 min. then add tomatoes and corn. Before serving top with grated cheese. Serve with brown rice.
