Professional chefs Andreas and Jenna Ortner of Sumerduck offered these tips for using truffles: When using truffles, a little goes a very long way. Unlike mushrooms that are eaten in quantity as a vegetable, truffles are most often shaved in tiny amounts and used for flavoring. Two classic ways to use truffles are in risotto (long cooked, creamy rice) and in French scrambled eggs (lightly cooked eggs with a splash of cream). Quality, black truffles are hard to come by and very expensive when you can find them. Truffle infused oil, however, is available at gourmet shops everywhere and is more affordable. When using infused oil. use only a drizzle to “finish" a dish with a rich, truffle flavor. For example, four servings of risotto need only a quarter teaspoon of infused oil for finishing. Dnzzle on the truffle oil at the table so everyone can smell the aroma as the oil hits the hot food.
