Dangers of Unpasteurized

Milk Emphasized

Dr. L. J. Roper, State Health Commissioner, today emphasized the dangers of drinking Unpas- ' teurized milk and called attention to some simple methods of heattreating milk at home in the event community supplies of pasteurized milk are not available.

The Health Commissioner pointed out that there are three approved home pasteurization methods which in the great majority of cases will provide adequate safeguards against milk-borne disease.

According to Dr. Roper, one of the methods—which may in some instances impart a cooked flavor to the milk—is recommended primarily for emergency situations in which community milk-processing plants may be put out of commission by fire, flood, or other 1 disasters, including bombing attacks.

The other two methods, which do not affect the flavor of the milk but take a little longer or require special equipment, are suggested for normal home use, where pasteurized milk is not available.

“There are too many commu, nities in Virginia where raw milk is drunk regularly despite its recognized threat to health,” Dr. Roper said.

The emergency method recommended by the State Health Commissioner:

Bring milk quickly to a boil in an open saucepan while stirring constantly. Immediately place the saucepan in cold water and continue stirring contents until cool. Change cooling water whenever it becomes warm.

Dr. Roper pointed out that although pasteurization destroys ^harmful bacteria, it is not effective against radioactive contamination.

- -, For reshjents» of communitieB where'trerr^DTHBRd'dr teurized milk, the State Health Commissioner recommends that raw milk purchases be pasteurized at home, either by. the emergency method recommended for disasters or by one of the two following methods:

(1) Heat the milk quickly in an open saucepan, stirring constantly until the contents reach a temperature of 165° P. A dependable cooking thermometer should be used. Then immediately place the saucepan in cold water and continue stirring the contents until' they are cooL Change the cooling water when it becomes warm. *

(2) Use one of the approved home pasteurisers cow. on the market.

“Statistics show that consumers « of raw milk are the victims of I most of the outbreaks of milkanorne diseases in this country,” Dr. Roper explained.
