Come-And-Get-lt Coffee Cake
, 8 to 10 servings / cup butter or
margarine, melted Z2 cup firmly-packed
light brown sugar 2 cups sifted enriched
self-rising flour 2 tablespoons sugar
1 tablespoons grated
orange rind
V, cup shortening
1 egg, beaten
/ to / cup milk
2 tablespoons butter or
margarine, melted Pour >4 cup butter or margarine in bottom of 8-inch ring mold. Sprinkle about 1cup brown sugar evenly over butter or margarine; set aside. Sift together flour and sugar into mixing bowl; stir in orange rind. Cut in shortening until mixture resembles coarse crumbs. Blend together egg and 1 x cup milk. Add liquid all at once to flour mixture, stirring until flour is moistened. If necessary, blend in more milk to make a soft dough. Turn out onto lightly floured board or pastry doth and knead gently 30 seconds. Break off 1-inch pieces of dough and roll into balls. Roll balls in 2 tablespoons butter or margarine. Place layer of balls on brown sugar mixture in mold. Sprinkle remaining brown sugar evenly over first layer. Top with remaining balls of dough. Bake in preheated 400° oven 25 to 30 minutes, or until golden brown. Immediately invert mold onto serving plate and let rest few minutes before removing.
