JHL 6 servings 1 package (10 oz.) frozen broccoli spears 2 cups enriched self-rising flour* 2 medium onions, sliced in rings V2 % cup milk 4 cups (Ilk.) shredded Swiss cheese cup milk (lib.) shredded 2 tablespoons butter Vi cup shortening 1 cup crisply cooked and crumbled bacon Cook broccoli according to package directions; drain. Saute onions in butter until limp; set aside. Cut shortening into flour until mixture resembles coarse crumbs. Blend in enough milk to make a soft dough. Turn onto lightly floured surface and knead gently 30 seconds. Roll dough into 11-inch square and fit into 8-inch square glass baking dish; flute edges. Layer tqp with lA of the cooked onion rings and V2 cup bacon. Arrange cooked broccoli spears on top. Layer remaining cheese, onion and bacon on top. Bake in preheated 450s oven 20 to 25 minutes. Serve immediately. *Spoon flour into dry measuring cup; level. Do not scoop. NOTE: If all-purpose flour is used, add 1 tablespoon baking powder and 1 teaspoon salt. Casserole may be decorated with baked biscuit cutouts, if desired.
