APPLE BATTER

6 to 8 servings 3 medium, tart red cooking % teaspoon cinnamon

apples, peeled, cored, 1 egg, beaten

thinly sliced (about 3l/2 % cup milk

cups 4 teaspoons melted shortenIV2 cups sifted enriched ing or oil

self-rising flour* 1 tablespoon sugar 2 tablespoons sugar V2 teaspoon cinnamon Grease rectangular 1%-quart baking dish. Preheat oven to 400°. Spread apples evenly over bottom of dish. Into mixing bowl sift together flour, 2 tablespoons sugar and Yt teaspoon cinnamon. Blend together egg, milk and shortening or oil. Add liquid all at once to flour mixture, stirring only until flour is moistened. Carefully pour over apple slices. Bake 30 to 35 minutes, or until golden brown. Meanwhile, combine 1 tablespoon sugar and V2 teaspoon cinnamon. Loosen edges of apple batter with spatula; immediately invert on cooling rack or serving plate. Sprinkle sugar-cinnamon mixture over top. Serve warm with butter, if desired.
