I like to wait about three weeks and then take down a sack, whack off a chunk, cut it into patties and fry it. If it isn’t quite ready, wait another week and repeat. When the sausage is right for your taste, take it down, cut it into one-pound chunks, wrap it and put it in the freezer for several months.
