CANNING ASPARAGUS

“Raw-Pack” directions from U. S. D. A. for canning asparagus are as. follows: Choose fresh, tender stalks. Wash. Trim off scales and tough ends and wash again. Cut in one inch pieces. Count on using 2 Vi to 3 Vi pounds of fresh asparagus for each quart.

Pack in jars as closely as possible without crushing to within Vi inch of the top^of jar. Add Vi teaspoon of salt td pint jars and 1 teaspoon for quarts. Cover with boiling water leaving Vi inch space at the top of jar. Adjust lids .In pressure canner at 10 lb. pressure process pint jars 25 minutes and quarts 30 minutes.

As jars are removed from canner complete seal if closures are not self sealing.
