Packaging Materials
for Freezing
With the fruits and vegetables ripening in the gardens, many homemakers are thinking of freezing or preserving. In order to get the right degree of quality in the product, packing materials need to be considered.
Many different packaging materials are used in the freezer. Some do a better job of keeping the food at the peak of quality than others. What are the marks of a good packaging material?
(1) It should be moisture and air tight. No moisture should escape from the package and no outside moisture or air should get into the package. If moisture escapes from the package, the food product will be drier as a result. Outside air may bring with it off-flavors.
(2) It should stand up at freezer i.cmpcratures. Some materials like ct:iophane and wax paper crack at freezer temperatures permitting an exchange of air and moisture. Brittle plastic containers and some glass jars which have not been heat tempered will sometimes crack at freezer temperatures.
(3) It should suit the food. Most fruits and vegetables can be made to fit the container. But the container has to be flexible for meats and baked products.
(4) It should be strong. This is especially important when wrapping meat as the bone may tear a hole in the wrapping.
(5) Some people like packaging materials which can be reused. Certainly, you could afford to pay more for a container that you were going to use several times. None of the papers are reusable. Glass and ..plastic, containers can be reused. Waxed catrons should
