THE EGG AND I

Imagine life without eggs - no omelettes to eat; no cakes to bake; nothing to hide at Easter; and nothing for hens to do. -

Eggs are touchy things. They break easily, so they must be handled gently. They spoil easily, so they must be kept under good refrigeration. They like to absorb odors, so it’s best to keep them covered. They come in different shell colors, but that’s only a breed characteristic which doesn’t affect the nutritive value or quality. They store better with the large end up, but why is a secret they keep to themselves.

Just to keep the facts straight: hard cooked eggs that are hard to peel are very fresh; small blood spots don’t affect flavor or food value...they’re still OK to use; eggs are good for caloric counters ■ a large egg has about 80 calories, 60 tff which are from the yolk; they are completely digested when eaten, offering valuable supplies of protein, iron, vi tarn ini A, B-2, and natural vitamin D.
