Stir together dry ingredients. Combine eggs and orange juice; add all at once to flour mixture, stirring until well blended. Turn onto wellfloured pastry cloth and knead until dough is no longer sticky, about 5 minutes. Cut in quarters. Cover; let rest 10 minutes. Roll each quarter with palms of hands into 12-inch rope; cut in 1-inch pieces. Roll out each piece to a 6-inch circle. Fry in 1/2-inch preheated 375° fat until edges turn golden brown, about 1/2 minute each side. Drain on absorbent paper. Roll in colored sugar, if desired. NOTE: Pastry cloth is essential to prevent sticking.
