To store cooked turkey, cook quickly and put in the coldest' part of the refrigerator. Stuffing should be removed from cooked poultry, cooled quickly and stored separately in a covered container for safety. “Use cooked poultry or stuffing within one or two days,” said Barton*
FOR BEST results, continued Barton, poultry should be packaged in moisture-vapor-resistant wrapping or bag, or suitable rigid container, frozen at zero degrees Fahrenheit or lower and held at that temperature. Uncooked turkey can be stored this way for 12 months.
Cooked turkey slices or pieces not covered with broth or gravy can be stored frozen for one month. If parts of the turkey are covered with broth or gravy, they can be stored for six months. Cooked poultry dishes can also be frozen up to six months.
“Never,” Barton warned, “stuff the turkey before freezing. Always freeze cooked poultry and stuffing separately.” □
