U>id pack is best. Heat ana air destroys vitamin C. The best flavor, color and food value comes from those packed cold into clean jars and processed in boiling water to cover. Pints, 25 minutes and quarts, 35 minutes. Peel red, ripe, firm, tomatoes, drop directly into jars, press down so jar is full of tomatoes and juice, add salt to season, seal and process.

Tomato juice is good canned or frozen. Wash red ripe tomatoes, cut up, mash a few to get some juice nd heat in a covered pan just long enough to get them soft and drive out air. Strain through sieve or food mill, season with salt, re-heat just to boiling point, pour into clean hot jars and process 5 minutes.

For freezing—After straining juice, chill it and pour at once into moisture and air proof containers. Seal and freeze at once.
