HOT ROLLS
5 or 51/2 cups TRIPLETT’S Enriched AM-Purpose
Flour (about) lV&cups milk, scalded 2 to 4 T shortening 2 teaspoons salt 1 yeast cake 2 tablespoons sugar i/4 cup warm water Combine milk, salt, sugar and shortening. Mix and allow to cool to lukewarm. Add softened yeast. Blend in enough sifted flour to make a medium stiff dough, turn onto a board and knead dough using remaining flour. Grease dough and allow to stand in a warm place until doubled in bulk. Shape into rolls as desired. Allow to rise until light. Bake in moderately hot oven (400°F) about 20 minutes. Yields 2y4 dozen, medium sized rolls.
