The strawberry season Is finally here. Suppose we look again to the buying guides for good qua lity. strawberries. Dc you know that unlike other fruits, strawberries will not ripen further after picking? Therefore avoid buying or pick ing those with a lot of white areas, these are under-ripe and will have a more tart flavor. A solid, bright red color is preferable because it means that the berries are ripe, and freshly picked. If the shiny "gloss" is gone, the berries have been picked several hours. If caps are missing, the berries are probably overripe and will have a mushy texture. Many think flavor and size are related but this isn’t so. Flavor depends on the variety and ripeness. A final check is to see that your berries are dry and free of dirt.
