Aid To Potato Shoppers
Rasier potato shopping is in prospect for the housewife, if potato growers and shippers generally adopt the new consumer grading system, now for the first time being used hv several shippers in Maine. Under the new grading a housewife who reads toe label on the hag may he sure of getting smooth, shallow eyed, f'ne quality potatoes, all of about the same size for even evoking, marketing specialists of the U.S. Department of Agriculture say. ■ Already on the market in eastern cities are bags of potatoes marked U. S. Grade A, with the size also indicated on the label. This is a consumer grade established by the U. S. Department of Agricultire, being used for many Maine potatoes coming on eastern markets.
The housewife who would know her potatoes before she buys, should look at the top of the hag for the words: U. S. Grade A. If ythe hag says: Medium to large, she will know that the potatoes inside will range in size from 2*2 to 4 inches in diameter. Most of the bags have a mesh window in the front to allow her to see what \these potatoes are like without having to handle them. Other grades are: U. S. Grade A Small, ranging from 1 M> to 214 inches; U. S. Grade A Medium from 2*4 to 3 inches; and U. S. Grade A large from 3 to 4 inches.
U. S. Grade B potatoes are divided into the same size groups as Grade A, but Grade B permits a higher percentage of dejects

.... yyr,..are labeled ’ this way. Though these are good potatoes generally, U. S. Grade A potatoes must meet a higher standard of quality, size and cleanliness. Some retailers may charge- slightly" more for U. S.' Grade A potatoes, but their uniform quality means' less waste and time spent in preparation and cooking. Paying slightly less for an inferior product rarely is economy. The new grades were developed in response to consumers’ demand for better quality potatoes and an easier, more certain gufde in shopping for these imported vegetables. Retailers report that bins filled wiht potatoes graded under the new system usually are empty at the end of the day in contrast to !bins of potatoes graded under the old system which usually are left with cut,- broken am burned or other potatoes which housewives have picked over and rejected.
