Sweet Potato Biscuits
2 cups sifted- enriched Trip- 2 tablespoons shortening lett’s self-rising flour 1 cup mashed cooked sweet % cup sugar potato ?| teaspoon nutmeg 54 cup buttermilk
Sift together “flour, sugar and nutmeg. Cut or rubln shortening until mixture is crumbly. Blend sweet potato and buttermilk. Add liquid all at once to dry ingredients, mixing until well blended. (Dough may be sticky.) Turn out on floured board or pastry cloth and knead gently SO seconds. Roll out 54-inch thick. Cut with floured 254-in. biscuit cutter. Place on ungreased baking sheet. Bake in hot oven (460 deg.) 12 to 16 minutes or until browned. Serve hot with butter or margarine. Makes about 12 large biscuits. Total preparation time: 36 minutes.
