How can I can get a frozen pie to bake uniformly? Often the top crust is fully browned before the pie is thoroughly bqked. Why? These are questions which are giving concern to homemakers. One solution is to thaw, the pie slightly before you put it in the oven. The slight thawing tends to reduce overbrown ing of the top crust before the pie is fully baked. Also it will allow the bottom crust to bake more thoroughly. Remem. ber, too, that if you use a dull pie pan for the baking, the bottom crust will brown more rapidly and uniformly. A shiny pan will reflect a great deal of the radiant heat of the oven and thus slow down cooking.
