PINEAPPLE OATMEAL MUFFINS 1 (8%-ounce) canned crushed pineapple 1 cup quick cooking oats '/2 cup dairy sour cream '/3 cup soft shortening y3 cup brown sugar (packed) 1 teaspoon grated orange peel 1 beaten egg l'/t cups sifted flour 1 teaspoon baking powder y2 teaspoon soda 1 teaspoon salt Combine undrained pineapple, oats and sour cream; let stand 15 minutes. Blend shortening with sugar and orange peel until fluffy. Beat in egg. Add flour resifted with baking powder, soda and salt alternately with pineapple mixture. Mix smooth after each addition. Spoon into greased muffin cups. Bake in hot oven (400 degrees F.) about 25 minutes. Makes 1 dozen large muffins.
