Tropical Bara About 2 dozen cookies 4 eggs 1 cup firmly-packed light brown sugar 1 teaspoon vanilla extract 1 Zi cups sifted enriched self-rising flour 1 cup flaked coconut 1 cup chopped dried apricots Confectioners sugar Beat eggs, adding sugar gradually until mixture is very thick. Blend in vanilla. Fold in flour coconut and apricots until mixture is well blended. Spread in 9 x 13 x 2-inch baking pan. Bake in preheated 350° oven 25 to 30 minutes, or until cake tester inserted in center comes out clean. Remove pan to wire rack and cool 5 minutes. Sprinkle confectioner’s sugar over cookies. Cut into bars. Remove cookies to wire rack and cool.
