Ambrosia Orange Roll
one 10x15-inch jelly roll pkg. CPi-oz.) orange flavor pudding mix, prepared can (11-oz.) mandarin oranges, drained cup coconut cup (12-pt.> heavy cream, whipped Meat egg whites until Foamy. Heat in sugar, 2 tablespoons at a time, until shiny peaks form; set a,side. Beat egg yolks until thick and lemon-cOlored; blend in almond extract. Fold into beaten egg whites. Sift flour, 1 *-cup at a time, over egg mixture, folding in gently after each addition. Turn into ungreased 10 x 15-inch jellyroll pan. Hake in preheated 375'' oven about 12 minutes, or until cake springs back when lightly touched. Loosen edges and turn out onto clean towel that has been dusted with confectioner*? sugar. Remove wax paper. Beginning at narrow end, roll up cake and towel, jelly-roll fashion. Cool completely on wire rack. While cake is cooling, prepare pudding mix according to instructions on package. Refrigerate. Combine cool pudding, orange segments (reserve about 12 segments for garnishing) and coconut. Unroll cake, remove towel, and spread with pudding mixture. Reroll, garnish with whipped cream and orange segments; chill until ready
