Beat eggs in top of double boiler. Add remaining ingredients except vanilla, beating until well mixed. Cook over hot but not boiling water, stirring constantly, until mixture noticeably thickens and heavily coats a metal spoon, about 20 minutes. Cool. Stir in vanilla. Chill.
