If you have noticed low quality results in food taken from your home freezer, your problem may be caused by keeping food in the freezer for too long a time period. Or perhaps you need to check the temperature of your freezer and set it for a lower temperature.

Home freezer owners should stock their freezer and use its contents so that a frequent complete turnover of frozen foods results. The higher the temperature maintained in the freezer, the more often this turnover should occur.

Research by the U.S. Depai tment of Agriculture’s Agricultural Research Service shows that many fresh-quality foods, properly packaged, frozen, and stored in home freezers at zero degrees F. or below, will still be very good after a year. After longer periods, the gradual loss of quality—including flavor, color, and texture—becomes apparent. Loss of quality may become evident in some foods stored at zero degrees F. within six months.

For these reasons, consumers with home-freezer space should plan for storage not to exceed a year at zero degrees F., and for shorter periods at higher temperatures. A year at O’ F. is roughly equivalent to five months at 5°, two months at 10°, one month at 15°, 1 week at 25° and only one day at 80°.
