CRISP LEMON COOKIES
Makes 8 Dozen
Cream together 1 cup sugar and cup butter or margarine until light and fluffy. Blend in 1 tablespoon grated lemon rind and 1 teaspoon lemon extract. Beat in 2 eggs, one at a time. Add 4 cups sifted enriched self-rising Triplett's flour alternately with 2 tablespoons milk. ^Beat well after each addition. Chill dough at least two hours or until it can be easily handled. Roll one eighth inch thick and cut with 2-inch cookie cutter. Place on greased baking sheat. and bake 8 to 10 minutes in oven at 400 degrees. Remove to wire racks and cool.
