Since turkey is plentiful this month, I'm including a recipe for turkey leftovers that I think you’ll like. This is a one dish meal so all you’ll need to add is salad and a drink.

Scalloped Turkey and

Vegetables 2 T. chopped onion 3/4 c. diced celery 1/2 c. diced carrots 1/4 c. cooked or canned peas 1 l/2c. diced cooked turkey 13/4c. turkey gravy 1/4 t. salt 1/4 c. dry bread crumbs 1 T. Melted butter or margarine.

Cook the onion, celery, and carrots 15 minutes in a small amount of water. Drain; save liquid to use in making gravy. Combine vegetables, chicken, gravy and salt. Blend well. Place in baking dish. Top with bread crumbs that have been mixed with the melted fat. Bake at 425 degrees F. 15 minutes or until the crumbs are brown.
