Cr%am together butter or margarine and sugar until light and fluffy. Blend in lemon rind and extract. Beat in eggs, one at a time. Blend flour into creamed mixture alternately with milk, beginning and ending with flour. ( Blend in about 1 cup flour, then few drops of milk, repeating until all is added.) Beat well after each addition. Chill dough in refrigerator until firm, about 2 or 3 hours. Roll out dough on lightly floured board or pastry cloth to about '*“-inch thickness. Cut out cookies with floured 2-inch cookie cutter. Place on greased baking sheets and bake in preheated 400° oven 8 to 10 minutes, or until lightly browned. Remove cookies to wire racks and cool.
