How you handle and care for meat products during the holiday season — or any other time — can have a lot to do with die health and safety of your family.
Dr. E. O. Essary, poultry scientist at Virginia Polytechnic Institute, says many housewives will be preparing turkey with dressing, ham, and other meats for the holidays. And there’s danger herein, if not done properly.
For instance, you may decide to cook a large turkey or ham in two installments—starting it one day and finishing it the next. Dr. Essary says cooking should be continuous. Partial cooking may produce a dry bird or ham and a lieheated flavor. If you want to partially cook the meat ahead of time, be sure to observe certain precautions.
