We do not freeze lettuce, tomatoes, cooked egg whites or mayonnaise. Freezing makes egg whites tough. Lettuce and tomatoes become watery and wilted when frozen. Mayonnaise separates.
If custard is cooked at too high a temperature the protein loses its ability to hold on to water. Thus the custard curdles.
