As traditional as Johnny Appleseed, the Apple Pie Cake revives a favorite Southern combination— apple and banana. This one-bowl cake demonstrates modern mixing techniques. It calls for apple pie filling and banana pudding mix to produce a new version of an old favorite.

134 cups sifted enriched Triplett’s self-rising flour 1 teaspoon cinnamon Vi teaspoon allspice 12 cup shortening 1 cup firmly packed light brown sugar

Sift together dry ingredients. Blend in shortening, sugar and 2 3 cup milk. Beat 2 minutes at medium speed of electric mixer or 300 strokes by hand. Blend in remaining milk and eggs. Beat at medium speed 2 minutes or 300 strokes more. Turn into greased pan; spread top with apple pie filling. Bake in preheated 350° oven, 35-40 minutes or until done. Cool. Prepare pudding mix according to directions on package; set aside. When cake is cool, spread pudding on top of cake.
