24 Pancakes With this simple recipe any student can prove the glamourous French crepe is easy to make. Because the crepe is notably egg-rich and tender, a lot of butter (one to two tablespoons) is required to fry each. The butter makes the crepe easy to turn and ensures a successful experience on the first try.

The versatile crepe lends itself to almost any filling. A simple serving suggestion for the classroom is to spread each crepe with a favorite jam or jelly, roll up and sprinkle with confectioners sugar. 1 cup Triplett’s sifted en- 2 tablespoons melted butter riched self-rising flour lVi cups milk 1 tablespoon sugar Butter 3 eggs, beaten Stir together flour and sugar. Combine eggs, 2 tablespoons butter and milk; blend well. Add liquid all at once to flour mixture ,beating until smooth. Melt butter in preheated 6-inch skillet. Pour 2 tablespoons of batter into pan and rotate quickly so batter covers bottom. Cook over medium heat 1 to 2 minutes on each side.
