Sunshine Cake (Basic Two-Egg CakeQuick Mix Method) Two 8-inch layers 8 to 10 servings 2 cups sifted enriched self-rising flour 1'/, cups sugar Vi cup all-purpose shortening 1 cup milk 1 teaspoon vanilla extract 2 eggs Sift together flour and sujrar into larpe mixing howl. I’.lend in shortening and cup milk. Heat 2 minutes on medium speed of electric mixer or 200 strokes by hand. Ulend in remaining milk, vanilla and eyys. Heat at medium speed 2 minutes or 200 strokes more. Turn into 2 yreased and wax paper-lined 8-inch round cake pans.
