Cut shortening into flour until mixture resembles coarse crumbs; stir in cheese. Blend in enough milk to make a soft dough. Knead gently in bowl 30 seconds. Roll or pat out 1 /2-inch thick. Cut out biscuits with 2 1 /2-inch cutter. Melt butter in skillet. Blend in barbecue sauce. Place biscuits in mixture, turning to coat each side. Cover. Place on grill 6 inches from hot coals or cook in skillet over low heat. Cook 10 minutes. Check to be sure biscuits are not too brown. Cook 5 minutes more, or until done.
