PINEAPPLE OATMEAL MUFFINS 1 (S%-ounce) canned crushed pineapple 1 cup quick cooking oats Z2 cup dairy sour cream '/s cup soft shortening Zj cup brown sugar (packed) 1 teaspoon prated orange peel 1 beaten egg 1!4 cups sifted flour 1 teaspoon baking powder Zz teaspoon soda 1 teaspoon salt » Combine undrained pineapple, oats and sour cream; let stand IS min utes. Blend shortening with sugar and orange peel until fluffy. Beat in egg. Add flour resifted with baking powder, soda and salt alternately with pineapple mixture. Mix .smooth after each addition. Spoon into greased muffin cups. Bake in hot oven (400 degrees F.) about 25 minutes. Makes 1 dozen large muffins.
