Cool damp cellars are fine for beets, carrots, and white potatoes, winter type cabbage. The room should be dark. Be sure to provide ventilation to avoid a musty condition. If your basement is quite cool, preferably below 40 degrees, your stored crops may last for several months. A dry unheated basement may be used by covering your produce with slightly damp peat moss, or with plastic to reduce water loss.
If a suitable place is not available in the house, you may store your root crops, potatoes and cabbage in an unheated garage or tool shed. The temperature will remain at a more uniform low level if the building is insulated.
