If it’s a working muscle..from the neck, shoulder or leg., it’s best to cook it longer and slow in a tight ly covered pan. Meat from a section that doesn’t get much exercise., the rib section, for example can, on the other hand, be broiled or quickly pan fried.
fl A Day for Food
It’s still possible to feed that man of yours on a dollar a day, say family economists of the U. S. Dept, of Agriculture. But it takes a bit of planning. And it means serving, meals with larger amounts of low-cost foods which are high in vitamin and mineral content..such as potatoes, dry beans and peas, and flour and cereals., and smaller amounts of meat poultry and fish, and of fruits and vegetables other than pa tatoes. If you want to feed him better., on what USDA's Agricult ural Research Service calls a “moderate-cost" plan you'll have to spend $9.90 a week. Arid for really good eating with a flourish of extras., and those steaks., figure about $11.20 a week for the man in your life. Here’s a useful tip from the U. S. Dept, of Agruculture on measuring refrigerated shortening, which is hard to pack into a measuring cup. This probably isn't news to you who learn to cook from grandma. Say your recipe calls for 1/2 cup solid fat. Put 1/2 cup cold water in a 1-cup measure. Add fat, pushing it under the water until water level stands at the 1 cup mark. Pour out the waten and you have a half-cup of fa^ Some water may cling to the fat, so it is best to use this
