Are we running out of water? Let's explore this frightening thought. I am a Food Technologist and work with food processing and food proces sors. I’m concerned that I may be out of a job and you may be out of commercially processed food products unless everything possible is done to conserve and preserve our vital water supply. Most processors use a tremendous quantity of water. First, the plant must be clean ed up, the workers’ hands scrubbed, and the soil wash ed off the fruit and vegetables These are then peeled and washed again and also carried about the plant suspended in water. They are blanched in boiling water, and water is added to the canned food. The cans are rinsed, cooked in steam made from water, and cooled in water. So you see, water is vital to my business. Are we running out of water The folks from Rutgers University have summarized the water shortage problem well. Most scientists agree that the amount of water on and in the earth has diminished little within recorded history. It is very difficult to destroy water. No matter what you do to it, water eventually comes back. All the water we have today is old used water, but mostly purified by nature, it is the same water that was used by our ancestors. Some of it is the same water used by our contemporaries. For example the water we drink today may have fallen as rain a season ago. Previous to that, these same molecules of water may have evaporated from the ocean. Perhaps a month or a year before that, the ocean re ceived some of this as waste water from an industrial plant.
