1 cup currants or raisins

or oil 3 cups Triplett’s sifted en* Vi cup chopped pecans

riched self-rising flour* - 3 tablespoons honey

Thoroughly grease 8V2*4Vi-inch loaf pan. Preheat oven to 350°. Blend together eggs, milk, V2 cup honey and shortening or oil. Add liquid all at once to flour, stirring only until flour is moistened. Stir in orange or lemon rind, currants or raisins and pecans. Turn into pan. Bake 1 hour and 10 minutes, or until cake tester inserted in center comes out clean. Cool in pan on wire rack 10 minutes before moving from pan. While still warm glaze with 3 tablespoons honey. Cool completely before slicing.
