Pork In
Family Meals
Kay E. Webb, Ext. Agt.
While driving around in the county for that last few weeks, we. have noticed a number of families preparing for winter by slaughtering and preparing the many pork items that are so appealing. If you do not slaughter your own animal, you may find that even in the grocery stores that pork prices are slightly lower. Pork is high in nutritive values and a particularly rich source of Vitamin B (thiamine). Even calorie watchers may include pork in their meals. A 3 oz. serving of roast fresh Boston butt with the fat trimmed off contains about 205 calories; 3 oz. serving of cured ham, fat trimmed off contains about 160 calories. U.S.D.A. bulletin 160 on Pork in Family Meals is available from the Extension Office. It gives tips on how to select good quality pork, how to store it properly, directions and timetable for cooking and recipes featuring po*k are also included. Call or visit the Extension Office /or this bulletin and other available free to you.
