COCOANUT LAYER CAKE

By: Mil* Louiip Schwartz 1i cup shortening 1 '•< cups sugar 4 eggs 1 cup milk 21 i cups <'ake flour 3 teasp. baking powder 1 teasp. salt 1 teasp. lemon extract Cream shortening with sugar and add beaten eggs. Sift flour together With dry ingredients anti add with milk, add extract. Bake in two 9-inch pan- at 350 degrees.

Cocoanut Icing

Combine 2 unbeaten egg whites. 1 l2 c ps sugar, 1 dasii of -ait, 1/9. cup water and 2 teasp. of corn syrup in double boiler and beat with electric of rcitaiy egg beater until well mixed. ('oi)k over boiling water, beating con-tantly. about 7 minutes or until frosting will stand up into stiff peake, stirring frosting up from bottom and sides of pan occasionally with rubber scraper or spoon. Remove from heat, add in' teasp. vanilla and beat about one minute or until .Click eno.gh to spread. Sprinkle with cocoanut. This recipe make- enough trusting to cover the tops and side- of two 9-ineh layers or two dozen cup cakes.

Don’t leave sheets in the open while waiting to put them on farm buildings. If you do, moisture will accumulate between them, and a white zinc carbonate will form. This permanently damages the zinc coaling and reduces the rust-free life of the sheets.
