Hotten or moldy apples, or apples with other defects which make them unfit for human consumption cannot *be used to make a food product. Both the Federal Food Drug and Cosmetic Act and the Virginia Food Act class as adulterated, any food consisting “in Whole or in part of any filthy, putrid, or decomposed substance or if it is otherwise unfit for food.” The term food means “articles used for food or drink for man or animals’.. Therefore any apple which falls in this classification must be dumped.
But getting back to those apples which are below grade when judged by fresh fruit standards, let us see how they can be profitably used. Apples are processed in vari. ous ways; as whole baked apples, apple slices (canned or frozen), ..apple sauce, fried apples, or as dried apples. With the exceptions of baked and fried apples, all the other apples which go into these products must be peeled.
