sifted cake flour, 1% c. sugar, 1 T. baking jowder, 1 tsp. salt. Make a well in above, add in order: % c. Kraft oil, 6 egg yolks, % c cold water, 2 tsp. lemon juice, 1 tsp. grated lemon rind. Beat with spoon ■till. xeiy smooth. Beat separately 6 whites of eggs with Vn tsp. cream of tartar until very very stiff. Pour egg yolk mixture gradually over whipped whites, carefully folding with rubber scraper until just blend* ed. Do not stir. Pour into 3 ungreased 9 inch round layer pans. Bake in very moderate oven 325 degrees, 25-30 min. or until top springs back when touched. Invert pans on cake rack, leave till cold. Then run spatula around edge of each; turn upside down and loosen by gently pressing on one edge of each cake with spatula.

PHILLY FiROSTING

White frosting: Blend together a % pkg. of Phil, cream cheese and 2 T. lemon juice. Gradually blend in 4 c. sifted confectioners’ sugar. Reserve 1/3 of frosting for decoration.^ use remainder of filling between 3 cake layers.

Yellow frosting: Make another batch of Philly Frosting as above. Blend in 1 tsp. grated lemon rind
