Cut shortening into flour until pieces are size of small peas. Sprinkle with water, a tablespoon at a time, mixing lightly until dough begins to stick together. Press into ball; divider in half. Roll each half out to 1/8inch thick on lightly floured surface. Invert tart pans on pastry and cut around, leaving 1/2-inch margin. Fit pastry loosely into pans; trim edges even with top of tart pans. Arrange on baking sheets; fill each not more than 2/3 full with Chess Filling. Bake in preheated 375° oven 25 to 30 minutes or until knife inserted off-center comes out clean. Cool; remove from tart pans.
