Head chef
Paul Lombardy, who lives in Fredericksburg right now, is the head chef at the Bistro. Lombardy brings a lifetime of experience in the kitchen to his new job.
“I’ve been working with food for 21 years,” Lombardy said. “There’s nothing else I’d rather do.”
Lombardy said that he wwked for a number of places in his career.
“I’ve worked at a lot of private restaurants and clubs,” he stated, “including one, 40 Main Street in New Jersey, that got four stars from the New York Times. It was a small restaurant, kind of like this place, and we did things like smoking our own fish. Hopefully I’ll be able to do the same things here.”
The lunch menu is extensive, from appetizers like chicken quesadillas and pita pizza, to soups, salads and sandwiches, like Tuscan beef and Alsace chicken, and entrees such as roasted salmon and pecan-crusted chicken breast.
