In apples, under today’s set-up, the grower is the one who can resist the least. The apple grower who is equipped only to sell to processors is especially vulnerable. He hasn't the .advantage of .the hired help, even. The hired help .can quit; go somewhere else: so the employer must comply with certain standards and obligations with, him. The one-customer grower can't “quit”. He has apples that will spoil shortly. He must deliver, or else. . . He is the “easiest way” for the processor. (We’re not pointing a finger. We’re just stating basics. All humans basically take the easiest way; growers, processors, everybody.) This conclusion stands out: 'Processors are, practically speaking, one customer. „ By sufficient organization, growers can be, practically speaking, one salesman; and bargaining is restored. But Selling (as opposed to Delivery) requires more than one buyer. What one buyer does not take, another buyer must. So growers must be actually and fully prepared to market to both processors and fresh channels. Otherwise you are not Selling. You are Delivering :-at the buyer’s price and conditions. Why grow apples if you can’t Bell them?
