These products have excellent flavor, almost no damage by diseases or insects, and are the most healthful the world has ever known. The improved quality is obtained, and errors in human judgement are eliminated, by using laboratory instruments and chemical tests. For example, the color of tomatoes is very important when used for juice or ketchup. Automatic equipment is now used to determine the color and grade of the fruit before processing, to assure a uniform, high quality product.
All types of fruits and vegetables are more carefully harvested, graded, and stored, than ever before. New processed products are being developed continually to simplify the planning of menus, and to make dining a real pleasure.
Some disturbing views are presented on the very inadequate food and housing conditions in some of the poorer nations of the world. The United States is playing a major role in supplying food to underdeveloped countries. We are also helping them adopt new production practices which will help make them more self-sufficient.
