Cover your barrel-type pit storage with several inches of straw, coarse dry weeds, corn stalks, or other materials. Then add several inches of soil. Dig this soil from around your pit storage to provide extra drainage during rainy periods. Additional insulation in the form of corn stalks or evergreen boughs may be needed to prevent freezing in severe cold weather.
WINTER type onions such as Ebenezer will keep for several months in a cool dry place. A temperature below 40 degrees is preferred. Be sure the onion necks are dry and shrunken before harvest. This indicates proper maturity and good storage life.
