Mix together V* cup of the sugar, melted butter, salt and cinnamon. Sprinkle in bottom of greased 2-quart casserole or baking pan. Arrange apples over sugar mixture. Crush whole wheat flakes slightly. Blend butter with remaining Vi cup of sugar and flour; mix with whole wheat flakes. Sprinkle over apples. Cover. Bake in moderate oven (350 degrees F.) for 30 minutes; remove cover and bake about 30 minutes longer. Serve warm with cream or ice cream. Yield: 6 servings.

Annie Moore of Moore’s Orchards makes Baked Sliced Apples on chilly fall nights. She peels and slices apples enough to cover the bottom of a pan, sprinkles sugar and cinnamon over the fruit, dots the apples with butter and bakes until tender.

Georgia Walsworth gave us two desserts that she makes with Follow Run Farm apples: A Fresh Apple Cake and an Apple*Applesauce Tart.

Fresh Apple Cake

Beat together 1 and one third cup oil, 2 cups sugar. 3 eggs. 2 tsp. vanilla.

Sift together three cups of flour. 1 tsp. soda. 1 tsp. salt, V* nutmeg. % tsp. lemon extract.

Combine dry and liquid ingredients. Add 3 cups chopped apples and 1 cup of walnuts or pecans.

Bake in a loaf pan, greased and floured, at 325 degrees for 1 to l‘/i hours. Cool 20 minutes and remove from pan.

Icing: Combine 4 tbl. of butter, Vi cup brown sguar. 2Vi tbl. evaporated milk. Melt together and bring to boil. Add '/j-1 cup confectioners sugar and beat in. Enough icing for top of loaf.

Apple Tart

You will need 4 cups thick homemade applesauce with 2 tsp. grated lemon rind added.

Pastry Shell

Combine I'/j cups sifted flour, 3 tablesppons sugar, '/« tsp. salt, '/: cup butter cut into cubes. 2 hard cooked egg yolks, 1 raw egg yolk. 2 tablespoons ground hazelnuts or walnuts, and '/: tsp. grated lemon rind. Work ingredients together with fingers until mixture is moistened and can be gathered into a ball.

Wrap in waxed paper and refrigerate until firm (20 minutes).

Roll dough into an 11’ round between pieces of waxed paper. Remove top paper and flip into tart plan. Remove the layer of paper. Refrigerate. Spread applesauce over bottom of pastry shell. Pare and slice about 1'/: pounds apples over top of applesauce so they overlap in a uniform arrangement. Bake in 400 degree oven for 50 minutes, checking at 45 minutes.
