And don’t forget the farmers’ markets for local, fresh from the farm potatoes and exotic varieties like blue potatoes.

Older potatoes (like baking potatoes) are higher in starch. They fall apart when cooked, so they’re a better choice for mashed potatoes, but if you’re careful to only cook them only until they’re just tender, you can use them in a pinch.
